In celebration of Mexico's Día de la Independencia this 16th of September, Diamond Hotel Philippines, in cooperation with the Embajada de México en Filipinas, today launches La Comida Mexicana, a five-day Mexican Food Festival to be held at Corniche, the hotel's all-day dining restaurant famous for its local and international themed buffets.

Highlight of the culinary festivity are Mexican dishes prepared by guest chef Daniela Romero who was flown in from Mexico especially for the event. She will work with the culinary team of Corniche headed by Chef Justin Abulaban to create some of the classic Mexican favorites such as Fajitas, Burritos and Queso Fundido, to name a few.
Other dishes to expect on the buffet are Grilled Chicken and Avocado Salad with Watercress, Crema de Frijol Negro (Black Bean Cream Soup), Pesacdo Guachinango a la Veracruzana (Fish Fillet with Red Spicy Sauce, Olive Oil, Tomato, Onion, Garlic, Chile Guero, Olive, Capers, Laurel, Thyme, Salt and Pepper), Camarones en Salsa de Chile Chipotle (Sauteed Shrimps in Chipotle Sauce) and Carne Tampuquena (Sauteed Beef with Chilies, Refined Beans, Guacamole and Enchilada). There's also a Tortilla and Taco Station to look forward to. Buffets aren't complete without dessert, and you must try the Arroz con Leche (Rice with Milk), Flan Napolitano, Manzanas Almendradas, and Cinnamon Churros.
