In celebration of its first year anniversary, NiU by Vikings will be serving nine special dishes as part of its buffet spread from October 19 to 27. Here's a preview of the nine special dishes that will surely bring you #upincloudnine
Caprese Mousse & Avocado-Shrimp Panacotta
Two desserts transformed into savory amuse-bouche. The Caprese Mousse (left) is a savory mousse which is inspired by the Caprese Salade, mainly consisting of Mozzarella, tomatoes and basil. The Avocado-Shrimp Panacotta (right) is a savory avocado panacotta topped with shrimp.
Cold Drunken Chicken
Moist and tender, this chicken dish has a very light taste with a hint of alcohol which will surely stimulate your palate, preparing it for the more complex tastes and flavors of the appetizers.
Supreme Mushrooms Bean Curd Skin Roll
Instead of bamboo shoots, this Cantonese delicacy was given a twist by filling it with braised mushrooms, which makes it more savory, rather earthy without the distinct sour taste of the bamboo shoots. The sauce has a very well balanced flavor of sweetness and saltiness.
Oysters and Pearls
I order baked oysters whenever we dine at NiU. But the Oysters and Pearls are an equally satisfying dish. Instead of baking, the oysters were poached in white wine cream, keeping the oysters juicy and tender. The white wine cream enhances the natural flavor of the oysters. The oysters are then served in a shell and topped with lumpfish caviar that gives a contrast in color and texture.
Tuna Teriyaki Salad
Slices of pan seared tuna are sprinkled with black sesame seeds and served with mixed greens dressed with orange vinaigrette bound with malt. This dish is very refreshing to the palate. The lightly sweet vinaigrette tones down the taste of the fresh tuna. It's not only a delicious dish, it's also fashionable because it follows the current trend of cooking in Paris, that is combining European and Japanese cuisines.
Sake Chahan, Saba Netsuke, Buta no Kakuni
This main course consists of Sake Chahan (Japanese Fried Rice with Salmon) which is topped with Saba Netsuke (Simmered Mackerel) and served with Buta no Kakuni (Braised Pork Belly). If you love Japanese cuisine, you will surely love this combination as it is already a complete meal in itself.
Braised Pork Loin in Malt Liquor
Chunks of pork loin were quickly fried and were then stewed in a broth with malt liquor, resulting to a meat that is tender and moist, with the skin losing its crispiness to the broth with a light malty flavor. The dish is served with balls of pears and carrots and molecular gel cubes of red wine and white wine.
Lamb Caldereta
The crowd's favorite was the Lamb Caldereta. The lamb was perfectly cooked. It was very tender that the meat fall apart in strands. It was cooked in a very rich tomato sauce which was very well balanced in flavor. The cooking removed all of the stark gamey taste of the lamb. It is topped with a slice of Edam cheese which added richness to the dish. On the side is a serving or Parmesan Risotto which was very creamy and went well with the Lamb Caldereta.
Cheesecake Soufflé
For dessert, we had the Cheesecake Soufflé which is a delicate and moist souffle with a lightly sweet cheesecake taste. It is served with a spoonful of tablea mousse which when poured over the souffle will melt and infuse its chocolate goodness into the dessert. A great combination of cheesecake, souffle and tablea if you would ask me.
Anniversary Cocktails
Aside from the special dishes, NiU will also be serving nine new cocktails. We were able to try the Cherry Drop (top) which is a mix of vodka, amaretto, soda water and cherry. A sparkling drink which is lightly sweet with hint of almond. The Purple Haze (lower left) is a mix of spiced rum, grape soda, blue curaçao, triple sec, orange wedge and cherry. It is a very fragrant cocktail with the bitter-zesty taste of dried orange peels and sweetness of cherry.
The Serenity (lower right) is a mix of vodka, melon liquor, green apple juice and blue curaçao. This fruity drink has the refreshing taste of green apples contrasted by the bitter-zesty taste of dried orange peels. Other drinks include the Niupolitan, a mix of vodka, cranberry and triple sec, the Niu Comfort, a mix of dark rum, southern comfort and soda, the Niu Sunrise, a mix of tequila, orange juice, pineapple juice and grenadine, the Hawaiian, a mix of vodka, gin, rum, triple sec, pineapple juice and blue curacao, the Ever Green, a mix of vodka, pineapple juice, lime, gatorade and grenadine, and the Caipirinha, a mix of white rum, sugar, lime wedge, soda water and Sprite.

Birthday Promo at NiU by Vikings
1. Birthday celebrators of all ages can avail the NIU birthday promo, “Flaunt Your Age,” on the day itself or on their birth month.
2. Celebrators will get a discount equivalent to their age on any day of their birth month on both lunch and dinner, as long as accompanied by ONE FULL PAYING ADULT.
3. One full paying adult are adult guests who will be paying full rate without any discounts.
4. Requirements for Celebrators: Celebrators must bring an ORIGINAL and VALID government issued picture I.D. with the birthdate imprinted on it, both local and foreign I.D.s are accepted, for proof (such as S.S.S., N.B.I., Driver’s License, Pag-Ibig, P.R.C., Barangay, Unified, Police Clearance I.D. and Passport) In the case that the celebrator doesn’t have a government issued picture I.D., he/she may bring his/her birth certificate supported by any picture I.D.
