Preparing this premium dish is award-winning guest chef Billy Cheong (張秉煌).
With over 40 years of culinary expertise, Chef Billy Cheong will prepare the roasted goose using the traditional technique combined with his special recipe, creating this iconic golden goose dish from China's Guangdong Province known for its very tender meat and crispy skin.
